Wicked Turkey Sliders with Cranberry Aioli

Ingredients:

  • 1 tablespoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup extra virgin olive oil
  • 1/4 cup leftover fresh cranberry sauce
  • 1/4 cup mayonnaise
  • Honey, for drizzling
  • Leftover turkey
  • Slider rolls

Black-Eyed Pea Turkey Chili

Ingredients:

  • 1 pound shredded, cooked turkey
  • 1 cup red onion, small diced
  • 2 tablespoons garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 2 tablespoons olive oil
  • 1/4 cup tomato paste
  • 1 14.5-oz. can diced tomatoes
  • 1 12-oz. bottle dark beer
  • 2 cups turkey or chicken broth
  • 1/4 cup canned chopped green chiles
  • 2 teaspoons salt
  • 1 teaspoon smoked paprika

Wicked Turkey Sliders with Cranberry Aioli

Directions:

1. Mix together cayenne, brown sugar, chili powder, garlic powder, paprika and extra virgin olive oil in a small bowl to make our “wicked spicy chili paste.”

2. Mix the cranberry sauce and mayonnaise in a small bowl to make the cranberry aioli.

3. Gently reheat leftover turkey slices and brush and brush liberally with the chili paste. Mound turkey onto slider rolls, drizzle with honey and top with the cranberry aioli.

*Makes 8-10 servings.

Black-Eyed Pea Turkey Chili

Directions:

1. Heat a dutch oven or other pot over medium heat, then add the olive oil. Add the garlic and onions and sauté until translucent.

2. Add the tomato paste and cook for approximately 2 minutes, stirring. When the tomato paste beings to caramelize, add all of the remaining ingredients. Stir and bring to a simmer for approximately 30 minutes.

*Makes 8-10 servings.
